Fines herbes is a combition of herbs that forms a mainstay of French cuisine that is a versatile mixture and are used in many recipes, especially foods with delicate or subtle flavors. "Fine herbs" are not the pungent and resinous herbs that appear in a "Bouquet Garni" – which, unlike fines herbes, release their flavour in long cooking.
Mix with fat and brush on any fish before baking or grilling. Add to flour and dredge for a great fried fish. So good in omelets, potatoes, soups or vinegarettes.
