Quiche

Favorite Pie Crust, par baked

1-3 cups Fillings of choice

6 Eggs, beaten

1 ½ cups heavy cream, half and half, or milk of choice

Salt and pepper to taste, or other herbs of choice

Place fillings into par baked crust. Combine eggs, cream, and seasonings, mixing well. Pour over fillings. Bake 30-45 minutes or until eggs are set and crust is golden brown. Serve hot, warm or room temperature.

 

Medieval Pork Pie

Favorite Double Pie Crust Recipe

1 ½ pounds pork, diced and cooked

1 egg

3 tbsp white wine

1/8 cup raisins, dried cranberries, or dates, chopped

½ cup almond flour

½ cup shredded cheese

Salt and pepper to taste

¼ tsp ground white pepper

¼ tsp ground cloves

½ tsp ground ginger

½ tsp ground mace

1 tsp ground cinnamon

1 cup chicken broth

In a bowl, combine all ingredients and mix. Pour into pie crust and top with second crust, crimping edges. Make a few slits in the top to allow steam to escape. Bake at 375 degrees for 45 minutes to an hour.

 

 

Chocolate Mousse Pie

21 Chocolate sandwich cookies

¼ cup melted butter

1 bag chocolate chips, or 12 oz of chocolate of choice

1 cup heavy cream

1 tsp vanilla extract

2 cups heavy cream

¼ cup white sugar

Grease bottom and sides of springform pan. Put cookies in food processor and blend until all crumbs. Add melted butter and process until combined. Evenly pack crust into bottom of sprinform pan and refrigerate for 30 minutes. While crust is chilling, place chocolate, 1 cup cream, vanilla and a pinch of salt in a bowl on top of simmering water, or in a double boiler. Stir occasionally until all chocolate is melted and combined. Remove from heat and allow to cool to room temperature, stirring occasionally. While chocolate is cooling, put 2 cups of cream and ¼ cup sugar in a bowl and beat until stiff peaks form. Gently fold that mixture into cooled chocolate. When completely combined, pour into crust and refrigerate for at least 6 hours before serving.

 

Sweet Potato Pecan Pie

Sweet Potato Filling

1 ¼ cups sweet potatoes, cooked and mashed

¼ cup brown sugar

¼ cup white sugar

1 egg, lightly beaten

¼ cup heavy cream

¼ tsp vanilla extract

Pinch salt

2 ¼ tsp Pumpkin Pie Spice

3 tbsp butter, softened

Pecan Filling

1 ¼ cups sugar

1 ¼ cups dark corn syrup

3 eggs, lightly beaten

3 tbsp butter, softened

¼ tsp vanilla extract

Pinch salt

¾ tsp ground cinnamon

1 ¼ cups pecans, chopped

Bourbon Sauce

2 sticks unsalted butter, cut into pieces

1 cup brown sugar

½ cup heavy cream

2 tbsp bourbon (or to taste)

¼ tsp vanilla

Favorite Pie Crust, unbaked in 9” pie plate

Preheat oven to 325 degrees. For Sweet Potato Filling: Combine sweet potatoes, sugars, egg, cream, vanilla, salt, pumpkin pie spice and butter. Beat at medium low speed until it is smooth. For Pecan Filling: Combine all ingredients. Pour sweet potato filling into pie crust and top with pecan filling. Bake for 1 ½ hours or until knife inserted into center comes out clean. Keep pie at room temperature. Best if made a day ahead.

For bourbon sauce, melt butter and brown sugar together in a heavy sauce pan. Stir constantly until sugar has dissolved completely. Slowly whisk in cream and then add bourbon and vanilla. This can be made and refrigerated up to a week in advance.

 

Apple Pie

5 large apples, peeled, cored and thinly sliced

Lemon juice

¼ cup flour

2 tsp pumpkin pie spice or your choice of spices (cinnamon, cloves, nutmeg, etc)

½ cup sugar

1 tsp vanilla

Double Pie Crust Recipe of choice

Toss sliced apples with lemon juice to keep them from browning. Add flour, spices, sugar and vanilla, tossing to combine. Add apples to prepared crust and top with second crust, crimping edges to seal. Make slits in the top of the crust to allow steam to escape. Bake at 375 degrees for 40-50 minutes.

 

Mincemeat Pie

Quick Mincemeat

2/3 cup chopped raisins

1/4 cup chopped candied orange peel

¼ cup brandy

Zest of orange

1 tsp fresh lemon juice

2 tbsp brown sugar

½ tsp cinnamon and ground nutmeg

¼ tsp ground cloves

5 apples, peeled, cored and sliced thin or finely diced

Favorite Double Crust Pie Recipe

Mix everything except apples together and pack into a jar. Let stand for at least a day at room temperature before using. Add more brandy if it all gets absorbed. Add to apples before baking. Bake at 350 degrees for 35-50 minutes or until crust is golden brown.
